I have a 79 double cab T2 which I am desperately trying to get on the road back here in the UK. To do this I am trying to find proof of the production date ( Date of birth) Is there somewhere in particular in SA that I can get this or can anyone work out the VIN plate?

Re: Date of birth
German-sourced ACVWs in SA used the same VIN format as all German-made VWs.
A 1979 double cab VIN should start with 269, where 2 = type 2, 6 = pick-up, and 9 = 1979. SA-assembled ACVWs did not have an M-plate, which means you can't work out the actual production date unless you apply to Wolfsburg for a birth certificate. All the online VIN tables for baywindow buses only let you know in which half of the production year the bus was built.
