the disc shouldnt move in relation to the caliper, so if it clears, that should be good enough. I'd say 1mm is fine, hopefully others can chime in.
The adapter will need to be trimmed down to clear. Easy on a lathe - your fathers lathe should work for this if he still has it.

Make sure you are using well fitting half thread bolts so that it can not move around in the hole.
Normally they supply you with a location bolt on the one side to stop the bracket from moving under braking.
If not, you can make a threaded tube and take up the clearance space around the bolt.

Great work on the bodywork!
Although I'm not one to comment on speed of projects, at least progress continues to occur... And once it's done and looks amazing, then hardly anyone (including yourself) will even pay attention to that anyway.
