Welcome to the forum

I think you may need a picture to demonstrate exactly what it is that you want.
The notchback is a car with a separate boot - think normal sedan.
The variant is a station wagon. “Variant” is the word VW always used and still uses for station wagons which is why you get a Passat variant brand new from the showroom floor still today. Audi uses the name “Avant” for the same style of car.

I think you are looking for a VW type3
Either a notch or a variant. You also get a fastback.

It didn’t heal that the type3 variant was registered as a variant and then vw continued the use of this name on many other vehicles
