Lighter car = less fuel used
helps with power to weight ratio
Cutting off the roof, might significantly increase the aerodynamic drag coeficient, which dependent upon the relative magnitude of effects (i.e. drag force versus mass-inertia and vector component of weight parallel to hill gradients), resulting in a possible fuel-consumption increase!

Besides that, unless one takes measures to strengthen the car to restore its stiffness and provide a roll cage (i.e. add back additional weight), after cutting off the roof, the vehicle is likely to be unsafe!

You want safe, go buy a new car.

The only safe 30+ old car could be a S-class Merc.
