Bowden tube the most likely cause of clutch shudder...
let the clutch bed in and see if it is still there, could just be the clutch is not worn in yet as well...

Hope they skimmed the flywheel too when they did the clutch....No point in putting a fresh clutch when the flywheel isn't smooth...

How long will it take for the clutch to wear in?
Upon driving home this evening, the shudder was bad. Felt like the motor wanted to pop out. (only in 1st on pull away though)
I cannot clutch control on an incline
Thing is I do not trust that mechanic and prefer not to go back. Will see if I can get some good advice somewhere else.

check that your bowden tube is setup properly.... This is where the clutch cable fits into a support on the gearbox. If it isnt attached to the gearbox support, the engine will jump as you described.

it is supposed to look like the one in the picture, with a bend in it before the support

yip, if it is that bad then it is almost certainly bowden tube related. Just climb under and make sure your tube has got a deflection of (i stand under correction) minimum 1.5 inches like in the photo Tony posted...
