Not difficult at all, only catch will be the wiring from the engine compartment/starter needs to be disconnected as well as the steering column removed from the steering box, tank also needs to come out, strip all the interior out, makes it easier, the rest is bolt off, only bitch is some of those pan bolts have been in for 30+ years and tend to refuse to come out or break, a can of Q20 a couple of days before on threads where possible will make things a bit easier, then you will need some man power to lift the body all off, doable in a day. A buddy and I stripped a comlete car on a Saturday morning a few months back. Stripping is fun putting together not fun at all.

The bolts are all visible the others are under the back seat and under the tank, the later 70's models also have a Z-bar over the rear suspension that needs to be disconnected there are also a couple of bolts on the front beam that need removing, if you have a ratchet and 13 & 15 sockets it is easy.
